What is white pepper?

 

White pepper is also produced from the dried berries of the same plant source as black pepper, Piper nigrum. The difference between white pepper and black pepper starts from the berries which are picked. 

 

The Difference in Production

 

In the black pepper production process, unripe but mature pepper berries are harvested and it causes the color and the flavor. In the production of white pepper fully ripen red pepper berries are harvested and they are soaked for 10 days (which leads to fermentation which black pepper doesn't). Then the skins of berries are removed(they can be easily removed after the fermentation). This skin removal removes some of the piperine and volatile compounds of white pepper which makes them have a mild flavor than black pepper. This difference in the production process leads to a different taste than black pepper and white pepper is high in both market demand and price.
